This is an interesting theory, but a theory nonetheless. Just because the dialogue is hinting at the fact that they met then, it doesn't make it so. But it is certainly worth noting as a possibility.
I really feel like you're missing the opportunity to read the Fables stories for yourself by asking these questions. If you enjoy the plot, really consider reading the Fables books because they are VERY good and asking questions like this is robbing yourself of some serious enjoyment.

There is a long story on the B-word. Bigby really is defensive of Snow, but also of his mother.

If he cut him self at the bed there would of been a decent amount of blood and the fact that he is not a very popular fable would mean he would not heal very quick.
I think this a pretty big part of it, since he has a particularly strong relationship with his mother due to his father leaving. Between being protective of women in general, his relationship with his mother, and the fact that his mother was, in fact, a canine, it all probably combines into not taking the B-word too well.
It's almost like insulting his mother as well.

When it comes down to it bitch is just name for a female canine I think has more to do with with the fact that Bigby regrets not being able to save his mother and protect her body I believe that he is trying to make up for his mothers death with other women, I am not saying its not the word but it's more about the person it's being directed at.
